Every time you pick up a new block, see a new mob, or make something new, it's like getting an achievement... that also happens to give you points and time. (a little noise plays, the game tells you what you found, the clock and points gets updated.)
The Basics
You start the game with 300 seconds on the clock. You need 1000 points to win.
Whenever you find a block, item or mob you've never seen before you get a small amount of time and points.
Every time you reach a new level high, you get more time as well.
The Details
In a normal game
mobs - 48 seconds - 5 points
items - 12 seconds - 3 points
blocks - 6 seconds - 1 point
Mobs are pretty much anything that moves. items are pretty much anything that can't be placed on the ground (a few exceptions exist like a bed) basically these are things you fabricate like food, dye, armor and weapons. blocks are well blocks, dirt, stairs, stone, logs etc.
Finding powerful mobs, items or blocks gives a flat 25% bonus to all time rewards for the past and going forward. because it is Retroactive so you get a huge payout for finding one. They become more and more important as the game progresses and it gets harder and harder to find new things. The bonuses stack! so the 2nd one you find effective is a 31.25% bonus (rounding withstanding)

Bonus Points are also available if you complete a tool set and have it on you. The wooden tool set gives 16 bonus points (but no extra time) this includes the shovel, axe, pick-axe, sword and hoe. Stone gives 32 points. Iron gives 64 points. Diamond 128 points. And netherite 256 points.
Some blocks are similar enough to other blocks that they won't count as new. sand and red sand for example. Most logs as well.
There is also bonus time to be had. This time is not added to the pool of total time displayed at the end of the game and is not used for the 25% adjustments.The initial 300 seconds you start the game with is effectively bonus time as well. Also there are no points with it. it is just a bonus to help you play longer. You get 10 seconds per new max level you get in the game. So getting to level 1 gives you 10 seconds, getting level 2 gives you 20, level 3 gives you 30 etc.. if you die or spend xp to drop down a few levels you don't get more bonus time until you get to a new max level. these bonuses are provided up to level 100.
You also get bonus time for wearing a complete matching armor set. 120 seconds for leather, 180 for gold, 240 for chain mail, 300 for iron, 360 for diamond and 420 for netherite
The game's difficulty varies based on the world difficulty when the game is started.
On Peaceful a win is 800 points
mobs - 192 seconds - 5 points
items - 48 seconds - 3 points
blocks - 24 seconds - 1 points
On Easy a win is 900 points
mobs - 96 seconds - 5 points
items - 24 seconds - 3 points
blocks - 12 seconds - 1 points
On Normal game a win is 1000 points
mobs - 48 seconds - 5 points
items - 12 seconds - 3 points
blocks - 6 seconds - 1 point
On Hard a win is 1100 points
mobs - 24 seconds - 5 points
items - 6 seconds - 3 points
blocks - 6 seconds - 1 points
If you lose you may continue to play in the world if you like and deactivate the behavior pack to turn off the in game display but the game is over until you star again in a new world.
If you win you may continue to play in the world and you will get a bonus permanent effect (i'll leave that as a surprise) for not running out of time and you know.. winning. :)
Some unsolicited advice
If you can, do a raid early in the game. Dieing over and over again isn't a big deal if things go bad if your level isn't very high, but later it can be impossible to catch back up before time runs out. The raid will give you a totem from the evoker (and the vex). This pays for itself over the course of the rest of the game. Also, a swim-by an ocean monument to just get near the elder guardian is an easy time bonus as well (if you have an ocean nearby). Hitting biome after biome is key to getting most of the mobs as well as the various woods. it makes a lot of sense to just churn out all the different things you can make with a particular wood before moving on (just for the points even if the time is pretty much a wash). on normal and hard getting to the nether is generally going to be key to getting the last of the points you'll need. It is unlikely you'll need to go to the end on anything other than hard. if you do kill the ender dragon the time adjustment will be HUGE since he drops so much xp (assuming you didn't die first). But just getting close to him gives you the time bonus which might be enough to let you finish the game even if you dont kill him (and like jump to your death). Finally, grinding levels will keep the game going via bonus time... so you know, don't die.
